BESAN BURFI

Some of the traditional and popular sweet recipes of India are made using chickpea flour and sugar syrup. One of them is perhaps one of the most Indian sweet recipes for the majority of the Indian festival or celebration feast. There are various methods the same burfi can be made but this article falls under a halwai-type recipe with an extra of rava added to it.

INGREDIENTS OF BESAN BURFI
- 1 cup ghee
- 2 cup besan
- 1 cup mawa
- 1½ cup sugar
- ¾ cup water
- pinch saffron
- food colour
- ½ tsp cardamom powder
INSTRUCTION OF HOW TO MAKE BESAN BURFI
- First, in a pan warm 1 cup ghee and 2 cup besan.
- Roast till the besan is golden brown color and fragrant.
- Roast on low flame for atleast 20 minutes.
- At the end of 20 minutes, the besan will turn golden brown.
- Add 1 cup mawa and cook well.
- Cook till the ghee separates from the mixture. Keep aside.
- In a large kadai add 1½ cup sugar and ¾ cup water.
- Boil the sugar to obtain 1 string consistency.
- Add a few kesar food colour for better colour and ½ cardamom powder for taste.
- Additionally, add the prepared besan mawa mixture and mix thoroughly.
- Maintaining the flame on low, stir constantly until the mixture becomes silky smooth consistency.
- Pour the burfi mixture into the tray lined with baking paper.
Garnish with 2 tbsp pistachios and rest for 1 hour. - Now cut into pieces and serve.
- Lastly, Besan Burfi Recipe is ready to consume for a month if refrigerated

Besan Quality – There are various kinds of besan available and I specifically use fine besan laddu flour. It should give a silky smooth consistency to the barfi and most importantly just melt in the mouth.
Roasting – The besan must be roasted with ghee prior to using it in the sweet. Roasting is responsible for bringing out the flavor of besan and also smoothening the texture of the final product.
Sugar Syrup – The consistency of syrup is an immense factor in the besan barfi recipe. Depending on the level of string in the syrup consistency, the softness becomes different. Thus one string is perfect for a smooth and soft barfi.
Stirring – Well, there is no shortcut with this. It is daunting but persistent stirring is a necessity. This keeps the besan mixture from sticking to the pan and is also roasted evenly.
Toppings – No toppings are generally added to besan burfi, but toppings of about chopped dry fruits are icing on the cake. Even raisins and tutti frutti can be an ideal option.
