Poha ( Maharastra Style) :

Poha is popular Indian breakfast made with flattened rice .It is nutritious. Its a 15 minutes simple recipe.

Ingredients:

1. 1 cup flattened rice (Poha)
2. 1 teaspoon oil.
3. 1 teaspoon mustard oil.
4. 1 teaspoon cumin seeds ( optional)
5. 1/2 turmeric powder.
6. 1/2 teaspoon salt
7. 2-3 curry leaves
8.1 small onion- chopped finely
9.1-2 green chillies
10. 1/2 cup peanuts and cashews
11. 1/2 grated coconuts
12. Fresh coriander leaves for garnish
13. Lemon wedges for serving ( optional)

How to prepare :

1. Rinse the flattened rice ( poha) in water for a second until it get softened. Drain well and set aside.
2. Heat the oil in the pan , add mustard seeds and cumin seeds and let them splutter.
3. Add curry leaves, chopped onion, green chillies and saute until onion get little brown.
4. Add peanuts or cashews and saute until it is lightly roasted.
5. Mix the rinse poha and add spices and nuts.
6. Add turmeric and salts and mix it gently.
7. Garnish with grated coconut and fresh coriander leaves.
8. Serve hot with lemon wedges on the side.

TIPS

1. We can add vegetables like potatoes, peas to make it more substantial.
2. Amount of green chillies and spices can be added according to taste and preferences.
3. Poha is enjoyed fresh but still we can store it in air tight container.
